Mike Chan is the Managing Director for Cape Bridge Creations and an F&B Consultant who began his journey in the industry as a wine importer in Tokyo.
His career has evolved to include the launch and management of fine-dining restaurants across key Asian cities, including Tokyo, Kyoto, Niseko, Hong Kong, Macau, and Singapore. Several of these establishments have earned Michelin stars, some through collaborations with hospitality groups such as Wynn Resorts, Mandarin Oriental Hotel Group, Four Seasons Hotels and Resorts, and The Peninsula Hotels.
From initial conceptualization to execution, Mike’s expertise spans chef recruitment, ingredient sourcing, marketing, and promotions. Fluent in Japanese and based in Tokyo and Hong Kong, he oversees the recruitment of chefs, restaurant licensing, and offers turn-key consultancy services to clients seeking to establish restaurants of diverse genres or expand their presence within Japan and other markets.
